Easy Coconut Caramel Sauce

This weekend was sunny and warm in Portland. Ironically enough, I’m working from South Carolina for the week – where it’s storming and humid. What are the odds?! Regardless of the weather, I’ve had a little bit of time to explore and check out the scenes. I’ve never been to the South before, so everything is new to me: the accents, the architecture, the food. And so far, it’s not disappointing. Southern hospitality is no joke. Everyone here is so friendly! It actually reminds me a little bit of home.

And speaking of home, homemade caramel is one of my favorite sweet treats (remember these bacon caramels? AHmazing.) So when I heard that it’s possible to make caramel with dairy substitutes, I had a *mind blown* kind of moment. Naturally I kicked the experiment off with coconut milk – because, I simply can’t get enough of it. And guess what? 20 minutes later, I had homemade coconut milk caramel sauce.

Bam!

Easy Coconut Caramel Sauce

Ingredients
1 can coconut milk
3/4 cup brown sugar
1/4 tsp course salt
Instructions
Whisk all ingredients together in a small pot on medium heat. Once the sugar is completely dissolved, increase the heat and let boil for around 20 minutes. Then set aside and let cool slightly before transferring to a glass jar.
